Making fluffy delicious palačinky can be achieved with almost any recipe as long as the proportion and right cooking procedure is applied. Be consistent on your advances and stick to your goals. Prepare you batter by following proper instructions and procedure. Always make sure the flour is sifted and be careful while adding water or milk to the flour. Make sure it does not excess but is moderately provided. If the batter is too stiff or watery your palačinky won’t turn out fluffy.
Start by supplying moderate amount of liquid slightly less than the recipe requires and increase the amount steadily until you achieve the right texture. Crack the eggs open and add in the watery mixture. Blend the mixture evenly with an egg beater or an electric whisk. Whisk the mixture until you observe a smooth runny batter. Stir in and add the extract of any essence you prefer, the most common ones being vanilla or fresh lemon flavor. 1 teaspoon of extract per batch of pancake batter is the advisable amount.
The essence adds a hint of extra flavor to the palačinky and makes it finer. Add 1 teaspoon of sugar per batch of batter and also make sure the proportion of baking soda is right. This will make the pancakes lighter and fluffier. After the batter is prepared let it settle for a while so that all the ingredients are mixed together as desired. Leave the batter ideally for an hour at least as it allows air to build within the batter. Cover the better and let it season to achieve light and fluffy pancakes. Once your batter has rested, do not stir it again.
Heat the griddle or pan over medium flame in the stove. Make sure it is greased moderately with the right amount of oil. Sprinkle and flick some drops on the griddle. If the droplets sizzle on contact and evaporate steadily the griddle is ready. Do not over flip your palačinky, doing it once is enough. When the edges appear to be toasted, overturn and flip it. If the flipped part is too brownish lower your stove flames. Make sure your palačinky are served hot off the pan.
